serves 4-6
1 600 ml carton double cream
45 grams of castor sugar
2 large lemons (juice of both zest of 1)
Method
- Bring cream and sugar to boil stirring constantly. Simmer for 3 mins
- Off the heat add zest and juice of lemon stirring well
- Cool for a few moments then pour into either a large or several small containers to set
- Chill for at least 3 hours in the fridge by which time it will be set
